For several years Bindi has produced a shiraz from Heathcote which it keeps and sells under the separate identity of ‘Pyrette’. This is a benchmark wine, since it shows first and foremost that Heathcote can produce – and perhaps is better suited to – shirazes of elegance and balance. Michael Dhillon prefers to harvest his fruit very early for this region, and typically crafts a complex, reductive and charmingly silky and savoury wine of obvious northern Rhône influence. Over time the style has become even more fine and elegant.
