A rustic, evolving and earthy sparkling shiraz whose fiery core of black and red fruits reveals notes of dark chocolate, polished leather, roasting meats, black licorice and a drying, faintly ferrous aspect. With a fine, crackly bead it’s black and brooding, rich and meaty, with plenty of firmness and grip. It just needs a great cut of steak that’s as charry on the outside as it is rare in the centre.
