    Profoundly ripened, this dark, brooding cabernet has a slightly baked, confiture-like bouquet of cassis, dark plums and blackberries knit with dusty, chocolatey, smoked oyster-like American oak and backed by ultra-ripe notes of raisins and prunes. ItÕs long and densely packed, with a robust spine of drying, chalky tannins permeating its pastille-like layers of dark plums, black and blue berries. ItÕs pushing the boundaries of genuine ripeness, perhaps losing some varietal identity in the process.

    Deeply ripened and densely packed, this classical expression of the Penfolds house style should cellar superbly. Its intense, briary aromas of cassis and dark plums and assertive cedar/vanilla oak are backed by notes of dark olives and dried herbs, mint and menthol. Long and luscious, itÕs steeped in palate-staining flavour of cassis, blackberries, briar and dark plums, cloaked in grainy chocolate/mocha oak and underpinned by a fine-grained and faintly mineral backbone.

    A more elegant and finely crafted Bin 707 whose sweet, deeply ripened aromas of cassis, blueberries, dark plums and cedar/vanilla oak overlie smoky mineral notes and a hint of bubblegum. Relatively fine and linear, with a juicy presence of mulberries and dark plums tightly knit with cedar/chocolate oak, itÕs framed by a fine, drying and faintly mineral backbone of dusty tannins, finishing long and vibrant with a suggestion of dried herbs.

    Classically powerful but more measured than ever before, this copybook cellaring red reveals a heady, faintly floral perfume of violets, mulberries, cassis and assertive chocolate/vanilla oak that retains a hint of pine resin. ItÕs long and luscious, steeped in pastille-like black cherry and mulberry flavour extending down a pliant but firm spine towards a mineral finish. It persists forever, with balance and charm. ThereÕs no use-by date with this wine.

    A powerful and deeply ripened 707 whose rather jammy bouquet of cassis, blackberries, cranberries and assertive chocolate/cedar oak reveals nuances of blueberries and a faint meatiness. Its long, voluptuous palate of fiery black and red fruits, baked earth and suggestions of roasting tray juices is handsomely oaked and supported by a firm, grippy and astringent spine of mouthcoating tannins. ItÕs just a shade too overcooked Ð with telltale notes of currants and figs Ð for a higher rating.

    Not entirely convincing, this firm and drying cabernet reveals a both under and overripe expression of raspberries, raisins, herbal notes and fruitcake-like spices backed by sweet vanilla oak. Fullish to medium in weight for a 707, it slowly reveals more depth of flavour, with lively red and black fruits knit with smoky, polished cedar/vanilla oak moving down a firm, drying backbone towards a finish of roasting meats, herbal notes and slightly dehydrated fruit.

    Exotically musky, wild and heady aromas of brambly ripe berry fruits of piecing intensity with fine, tight-knit smoked oyster, clove and cedar oak influences. Wonderfully rich, elegant and perfectly ripened palate of pristine dark berry and plum flavours, creamy, smoky French oak and powder-dry tannins. Better than the 1997 Grange.

Revealing both under and overripe flavours, it’s a faster-maturing red with a supple spine of loose-knit tannins, pleasing balance and harmony.
