Evolving, shorter-term cabernet with a meaty, pruney aroma of baked red fruits, raisins and currants. Cooked and stewy, the palate is thin and lacks both freshness and length.
A fine, firm and elegant cabernet with pleasing length and structure. Its delicate earthy perfume of cassis and dark plums overlies nuances of mint and menthol, while its palate offers more in the way of primary fruit sweetness than typically seen in Tahbilk reds. Supple and fine-grained, with bright and juicy small berry and plum-like flavours framed by powder-fine tannins, it’s long, evenly balanced and harmonious.
A very old-fashioned red that needs a very, very long time. Its minty, eucalypt-like aromas of blackberry jam, dark plums and menthol precede a firm, heavy and powerfully astringent palate whose jammy fruit is coated by hard, sinewy tannins. It should, however, repay those with the cellaring conditions and the patience.
Charming, juicy and approachable, this carefully structured, finely balanced and potentially long-term cabernet has a minty scent of violets, red berries, menthol and cassis backed by restrained mocha/vanilla oak. Its smooth, loose-knit palate of blackberry-like fruit has a powdery undercarriage with a firmness that creeps up on you.
Showing both under and over-ripened influences, this earthy, meaty and greenish cabernet reveals some briary cassis, mulberry and currant-like fruit, but thins out towards a simple, rather cooked finish. It lacks genuine fruit sweetness.
A firm, modestly oaked cabernet of strength and structure whose sweet, faint minty bouquet of cassis, blackberries, briar and dark plums overlies a hint of raisins and a faint earthiness. Its sumptuous, black-fruited palate is underpinned by pliant, fine-gained tannins, a graphite-like minerality and a suggestion of mint. It should age slowly in traditional Tahbilk style.
An elegant, longer-term cabernet in the traditional Tahbilk style whose delicate, lightly floral scents of black and red berries are gently backed by restrained cedary oak. It’s long and finely structured, with a brightly lit presence of small black and red berries playing long and soft down a fine-grained, drying backbone, finishing with freshness and suppleness.
