From the small house of Devaux, Champagne winemaker Michael Parisot collaborates with Yering Station in the making of this blend from different cool-climate Victorian regions. The wines have evolved into a fine, chalky and mineral style with perfume and a linear movement of flavour down their finely textured palate Đ in other words, an ideal aperitif. There is however a little more creamy richness and roundness about the current 2009 vintage.
