Jeremy tastes a classic semillon from Tyrrells in the Hunter Valley

Australia doesn’t have too many totally original styles of wine of world-class quality. Perhaps our finest indigenous style is Hunter Valley semillon – a wine that when made from top sites and seasons can undergo changes in the bottle that are simply astonishing. Defying logic, an un-oaked semillon picked at low levels of ripeness can with time resemble a traditionally-made barrel-fermented chardonnay. Jeremy introduces the concept.
