Yarrabank, the Australian sparkling wine venture established by the French house of Devaux Champagne and which recently became a joint venture with the new owners of Yering Station, has certainly lived up to all initial expectations with a polished first release. Made by globetrotting winemaker Claude Thibault, the Yarrabank Cuvee 1993 is made from equal parts of pinot noir and chardonnay, half of each variety sourced from the Yarra Valley and the Mornington Peninsula. The wine was corked after three years on yeast lees.
