[question] Question submitted by Andrew Smith, Australia. I would like to add some white wines to my cellar for my own enjoyment but don’t have much knowledge on cellaring whites. Which white wines do you have in your cellar? [/question] [answer] I cellar a lot of white wine. I try to keep a decent stash of mature riesling from Eden Valley, Clare Valley and the Great Southern (WA). I’ll begin to open them at around eight years of age, but typically keep them for twelve or more if they’re up to it. Same goes for Hunter semillon, and I have a reasonable volume of old Tyrrell’s and Mount Pleasant. The Lovedale keeps better than the Elizabeth, as you’d expect. I also have a fair volume of semillon and semillon- sauvignon blanc from Margaret River. I don’t have nearly as much old riesling from Alsace and Germany as I would like. I do keep some top-drawer Australian chardonnay, especially those like Leeuwin Estate’s Art Series, Lake’s Folly and Tyrrell’s Vat 47 that have a proven track record in the cellar. Others I do keep are Giaconda, Bannockburn and Bindi. I will sometimes keep these wines for a decade or so, but also have a decent second tier of Australian chardonnay that I keep until around five years from their vintage. I also have a stray and random series of dessert wines that tend to get older and older simply because I don’t open them quickly enough. [/answer]
