Champagne Bollinger’s concern over the demise of the Syndicates de Grandes Marques in Champagne gives more weight than ever before to its Charter of Ethics and Quality, which it published in 1992. I’m a Bollinger fan and give great credence to the Bizot family’s integrity, which underpins its commitment to total control of all aspects of the production process from grapes to shipping. It’s regrettable that the Syndicate’s demise could only have been caused by some of its former members deciding they could no longer operate within the rules that the organisation once stood for.
