One of the Champagne’s greatest winemakers passed away recently. Daniel Thibault, chef de cave at Champagne Charles Heidsieck, died at the tender age of 55. While his career in Champagne extends back well beyond these recent efforts, Thibault should be rightly honoured for his rejuvenation of the Charles Heidsieck brand, which includes the introduction of the brilliant Mis-en-Cave concept for NV wines, as well as revitalising the house of Piper-Heidsieck. A disarmingly modest man and a great communicator on Champagne, Thibault presented a creative and human face in an industry dominated by corporates.
